ABOUT RICE
Basmati, meaning ‘Queen of Fragrance’ is a variety of long grain rice, famous for its fragrance and delicate flavour. Basmati rice has been reported in India since the early days of the 19th Century though it may have been named differently. Basmati is a variety of long grain rice which is traditionally from India . Its also called Oryza Sativa . Indian basmati Rice is one of the famous world wide for its quality and aroma.

VARIETIES
There are several varieties of basmati rice. 1121 Sella/Steam/Raw, Pusa Sella/Steam/Raw, Sugantha Sella/Steam/Raw, Sharbati Sella/Steam/Raw. Pusa & Sugantha is also called the name of super Kernel Basmati Rice. This rice is different from other rice mainly due to the aroma and elongation post cooking. No other rice has this combined characteristic. The post cooking elongation of more than twice its original length, the aroma and its sweet taste has made basmati rice a delicacy.

Rice other than basmati rice is called non- basmati rice. In the world it has been reported that there are 10000 varieties of rice, the maximum number being in India. In fact, basmati rice equals to only 1% production of the total rice grown in India. Non- basmati rice comes in all kinds of different shapes and sizes. Some are long and slender, some are short and thick, some are like beads, and some may be round. None have the same characteristics as basmati rice. Some names of non basmati rice are shaped like basmati rice and PR, 104 IR8, IR 64, Masuri.

What is Millet?
Millet is a group of small-seeded grasses, which is cultivated throughout the world, for human consumption. It is mainly grown in developing countries, but its ability to grow in relatively harsh, arid, and dry environments makes it a highly versatile crop.
Although there are different varieties of millet grown around the world, the most common cultivar is Pennisetum glaucum, also known as pearl millet. [1] In terms of history, millet likely originated in Africa but then spread throughout Asia and the Middle East roughly 10,000 years ago.
India cultivates over 8 million tons of these grains every year, followed by Africa and China. Millet can be used as a traditional cereal, and can also be used in porridge, snacks, and other types of bread. [2] Millet is a good source of carbohydrates and fiber, like other grains. It is also a good source of nutrients, vitamins, minerals, and organic compounds that can boost human health in various ways.
As Celiac disease has become more commonly diagnosed and researched over the past year, millet has been a good gluten-free option for those who suffer from reactions when gluten is consumed. TURMERIC POWDER

Introduction Turmeric (Curcuma longa) is native to Asia and India. The tuberous rhizomes or underground stems of turmeric have been used from antiquity as condiments, a dye and as an aromatic stimulant in several medicines. Turmeric is very important spice in India, which produces nearly entire whole world’s crop and consumes 80% of it. India is by far the largest producer and exporter of turmeric in the world. Turmeric occupies about 6% of the total area under spices and condiments in India. World scenario Turmeric is also cultivated in China, Myanmar, Nigeria and Bangladesh. However, authentic figures about area and production are not available. Major area is in India which constitutes 82% followed by China (8%), Myanmar (4%), Nigeria (3%) and Bangladesh (3%) Indian scenario There is an increase from 162.9 thousand ha in 2001-02 to177.5 thousand ha in 2005-06. Similarly, the production has increased from 552.3 thousand tons in 2001-02 to 846.7 thousand tons in 2005-06

Commercially grown varietiesThere are about 30 turmeric varieties grown in India. Among them Alleppey and Madras (Perianadan) are of great commercial importance. Some of the improved varieties are: CO-11983, BSR-11986, Krishna, Roma, Suroma, Ranga, Rasmi, Megha Turmeric-1, Suguna, Sudarshana, Suranjana, Duggirala, Kodur, Suvarna, Varna, IISR Prabha, IISR Pratibha, Rajendra Sonia etc.

Mango Pulp
Mango Pulp is prepared from selected varieties of Fresh Mango Fruit. Fully matured Mangoes are harvested, quickly transported to the fruit processing plant, inspected and washed. Selected high quality fruits go to the controlled ripening chambers; Fully Ripened Mango fruits are then washed, blanched, pulped, deseeded, centrifuged, homogenized, concentrated when required, thermally processed and aseptically filled maintaining sterility. The preparation process includes cutting, de-stoning, refining and packing. In case of aseptic product the pulp is sterilized and packed in aseptic bags. The refined pulp is also packed in cans, hermetically sealed and retorted. Frozen pulp is pasteurized and deep-frozen in plate freezers. The process ensures that the natural flavour and aroma of the fruit is retained in the final product.
Mango Pulp/Concentrate is perfectly suited for conversion to juices, nectars, drinks, jams, fruit cheese and various other kinds of beverages. It can also be used in puddings, bakery fillings, fruit meals for children and flavours for food industry, and also to make the most delicious ice creams, yoghurt and confectionery

Main varieties of Mango Pulp are Alphonso Mango Pulp, Totapuri Mango Pulp, Kesar Mango Pulp.

Areas of Cultivation and Processing:

Two main clusters of Mango Pulp are there in the country, which has around 65 processing units with a good backward linkage of Alphonso and Totapuri variety of mangoes. These clusters are Chittoor in the state of Andhra Pradesh and Krishnagiri in the state of Tamil Nadu . Some of the Processing units are in the state of Maharashtra and Gujrat.

Tomato puree is a thick liquid made by cooking and straining tomatoes. The difference between tomato paste, tomato puree, and tomato sauce is consistency, tomato puree has a thicker consistency and a deeper flavor than sauce. Tomato puree can be used in soups, stews, sauces, or any other dish where the tomato flavor is desired, but not the texture. Tomato purée has approx 14% solids content.
